Ingredients
2 1/2 pounds of Lamb Loin Chops (Trim The Fat Off)
1/2 cup of Whole-Wheat Couscous
1 tablespoon of Minced Garlic
1 cup of Water
1/4 teaspoon of Salt
1 tablespoon of Finely Chopped Fresh Parsley
2 Medium Chopped Tomatoes
2 teaspoons of Extra-Virgin Olive Oil
1 Medium Peeled & Chopped Cucumber
3 tablespoons of Lemon Juice
1/2 cup of Crumbled Feta
2 tablespoons of Finely Chopped Fresh Dill
Directions:

  1. Bring water to a boil in a medium-sized saucepan.
  2. Combine your parsley, salt, and garlic in a small-sized bowl. Press your
    garlic mixture into each side of the lamb chops. Heat oil over a mediumhigh
    heat in a large skillet. Add your lamb chops and cook
    approximately 5 to 6 minutes per side until you’ve reached the desired
    level of cooked. Keep them warm until it is time to serve.
  3. Stir your couscous into your boiling water. Return to a boil, reduce heat
    to a low simmer, cover and cook approximately 2 minutes. Remove
    from the heat and allow to stand uncovered for 5 minutes. Fluff
    couscous with your fork. Transfer over to a medium bowl. Add your
    cucumber, tomatoes, lemon juice, dill, and feta. Stir well to combine.
  4. Serve and Enjoy!
