Mediterranean-Style Baked Egg Boats
Ingredients:
6 Eggs
2/3 cup of Sour Cream
1/4 cup of Diced Sun-Dried Tomatoes
1/2 Diced Yellow Onion
4 ounces of Crumbled Feta Cheese
5 ounces of Chopped Spinach
1/2 teaspoon of Ground Black Pepper
1 1/2 teaspoons of Salt
4 Square Ciabatta Rolls
Directions:
- Preheat your oven to 375 degrees.
- Line your baking sheet with some parchment paper.
- Whisk together your eggs, onion, tomatoes, sour cream, feta, spinach,
pepper, and salt in a mixing bowl. - Cut off the top 1/2 inch of all your ciabatta rolls. Pull out most of the
doughy insides. - Place your rolls, hollow sides up, on your baking sheet.
- Evenly distribute your egg mixture into each of the hollowed out rolls.
- Bake approximately 25 to 30 minutes. The filling should be set in the
center and the rolls should be a golden brown color. Allow to cool
approximately 5 minutes. Cut each roll crosswise into strips. - Serve and Enjoy!
