Ingredients:
6 Eggs
2/3 cup of Sour Cream
1/4 cup of Diced Sun-Dried Tomatoes
1/2 Diced Yellow Onion
4 ounces of Crumbled Feta Cheese
5 ounces of Chopped Spinach
1/2 teaspoon of Ground Black Pepper
1 1/2 teaspoons of Salt
4 Square Ciabatta Rolls
Directions:

  1. Preheat your oven to 375 degrees.
  2. Line your baking sheet with some parchment paper.
  3. Whisk together your eggs, onion, tomatoes, sour cream, feta, spinach,
    pepper, and salt in a mixing bowl.
  4. Cut off the top 1/2 inch of all your ciabatta rolls. Pull out most of the
    doughy insides.
  5. Place your rolls, hollow sides up, on your baking sheet.
  6. Evenly distribute your egg mixture into each of the hollowed out rolls.
  7. Bake approximately 25 to 30 minutes. The filling should be set in the
    center and the rolls should be a golden brown color. Allow to cool
    approximately 5 minutes. Cut each roll crosswise into strips.
  8. Serve and Enjoy!
