Egg-Crust Vegetarian Breakfast Pizza
Ingredients:
2 Eggs
4 ounces of Mushrooms
6 Sliced Black Olives
2 teaspoons of Olive Oil
1 ounce of Low Fat Mozzarella
1/4 Sliced Green Bell Pepper
1/4 teaspoon of Dried Oregano
1/2 teaspoon of Spike Seasoning
Directions:
- Preheat oven broiler. Wash your mushrooms. Dry with paper towels
and cut into thick slices. - Heat 2 teaspoons of your olive oil in a small omelet pan. Add your
mushrooms and saute over a medium-high heat. Cook for
approximately 6 to 7 minutes until lightly browned. Remove
mushrooms and move to your cutting board. - Slice your olives and bell pepper. Cut your mozzarella into small
chunks and beat your eggs. - Add a teaspoon of olive oil to your pan once mushrooms are done and
heat for approximately 45 seconds. Add your eggs and reduce to a
medium heat. Season with your spike seasoning and oregano. Let your
mixture cook for 2 minutes. Add your mushrooms, olives, half of your
mozzarella, and half of your bell pepper. Then add a second layer of
mushrooms, olives, bell pepper, and cheese. Cover your pan and cook
for 3 to 4 minutes until the eggs have set and the cheese is slightly
melted. - Place your pan under the broil and continue to broil until your cheese is
completely melted and browned. Should take approximately 3 to 4
minutes. - Serve and Enjoy!
