Ingredients
• 1/2 tsp. salt, divided
• 3 oz. fresh mozzarella, halved and sliced
• 2 chicken breasts, boneless and skinless
• 1/2 tsp. black pepper, divided
• 1 medium tomato, sliced
• 1/4 cup prepared pesto
• 2 tbsp. extra virgin olive oil
• 8 cups broccoli florets
Directions

  1. Preheat the oven to 370 degrees F and grease a baking sheet.
  2. Season the chicken with salt and black pepper.
  3. Insert mozzarella and tomato slices in the chicken cuts.
  4. Brush with pesto and transfer the chicken breasts on the baking sheet.
  5. Toss broccoli with oil, salt and black pepper in a large bowl.
  6. Spread the broccoli mixture around the chicken and bake for about 25
    minutes.
  7. Dish out and serve warm. Enjoy!
