Hasselback Caprese Chicken
Ingredients
• 1/2 tsp. salt, divided
• 3 oz. fresh mozzarella, halved and sliced
• 2 chicken breasts, boneless and skinless
• 1/2 tsp. black pepper, divided
• 1 medium tomato, sliced
• 1/4 cup prepared pesto
• 2 tbsp. extra virgin olive oil
• 8 cups broccoli florets
Directions
- Preheat the oven to 370 degrees F and grease a baking sheet.
- Season the chicken with salt and black pepper.
- Insert mozzarella and tomato slices in the chicken cuts.
- Brush with pesto and transfer the chicken breasts on the baking sheet.
- Toss broccoli with oil, salt and black pepper in a large bowl.
- Spread the broccoli mixture around the chicken and bake for about 25
minutes. - Dish out and serve warm. Enjoy!
