½ cup couscous
1 cup vegetable stock, hot
2 red beets, cooked and diced
2 tomatoes, diced
1 cup chopped parsley
¼ cup chopped cilantro
1 tablespoon chopped mint
2 tablespoons chopped chives
2 tablespoons pine nuts
Salt and pepper to taste
1 lemon, juiced
4 oz. feta cheese, crumbled

  1. Combine the couscous and hot stock in a bowl and allow to soak up
    all the liquid.
  2. Add the beets, tomatoes, parsley, cilantro, mint, chives and pine nuts.
  3. Add salt and pepper to taste then drizzle in the lemon juice.
  4. Top the salad with feta cheese and serve right away.
